Method
- Pound the pork cutlets evenly to approximately ¼-inch thickness.
- Pat the meat dry and season both sides with salt and pepper.
- Set up three dishes containing flour, beaten eggs, and breadcrumbs.
- Coat each cutlet in flour, then egg, then breadcrumbs.
- Heat oil in a large skillet to approximately 350–360°F.
- Fry the schnitzel for about 2–3 minutes per side until golden brown and crisp.
- Transfer to a wire rack or paper towels.
- Serve immediately with fresh lemon wedges and traditional German side dishes.
