In another bowl, whisk together the eggs, buttermilk, melted butter, and vanilla.
Pour the wet ingredients into the dry ingredients.
Gently stir until just combined. Do not overmix; a few lumps are perfectly fine.
Let the batter rest for 5–10 minutes.
Heat a nonstick skillet or griddle over medium heat and lightly grease it.
Pour approximately ¼ cup of batter onto the skillet for each pancake.
Cook for about 2–3 minutes, until bubbles form and the edges look set.
Flip and cook for another 1–2 minutes, until golden brown and cooked through.
Repeat with the remaining batter.
Serve warm with butter, maple syrup, fresh fruit, or your favorite toppings.
