Ingredients
  

Chicken and Sauce
  • 2 pounds chicken
  • 4 cups chicken broth
  • 1 onion
  • 2 celery stalks
  • 2 carrots
  • 3 garlic cloves
  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • Salt and black pepper to taste
  • 1 bay leaf
Dumplings
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons cold butter
  • 3/4 cup whole milk
  • 1/4 teaspoon black pepper
  • Fresh parsley optional

Method
 

  1. Cook the chicken in chicken broth with the bay leaf until tender and fully cooked.
  2. Remove the chicken, allow it to cool slightly, and shred it into bite-sized pieces.
  3. Sauté onion, celery, and carrots in butter until softened.
  4. Add garlic and cook briefly.
  5. Stir in flour and cook for 1–2 minutes.
  6. Gradually add chicken broth while stirring continuously.
  7. Add milk, cream, thyme, parsley, salt, and pepper.
  8. Return the shredded chicken to the creamy broth.
  9. Prepare the dumpling dough by combining flour, baking powder, salt, and pepper.
  10. Cut cold butter into the flour mixture.
  11. Add milk and gently mix until a soft dough forms.
  12. Drop spoonfuls of dough over the simmering chicken mixture.
  13. Cover and cook for 15–20 minutes, or until the dumplings are fully cooked.
  14. Garnish with fresh parsley and serve immediately.
